Batter Breaded Fried Chicken

  • 2 to 3 lbs frying chicken pieces - breast, legs or both
  • 2 cups prepared buttermilk pancake mix
  • 2 to 3 cups coarse bread crumbs - I make my own in a blender or food processor
  • 1 tsp. seasoning mix - Morton's Nature's Seasons or similar
  • 1/2 tsp. paprika

Preparation -
Prepared pancake mix and set aside. Combine bread crumbs & seasonings. Dip chicken in pancake batter Dip lightly battered chicken in bread crumb/seasoning mixture. Fry chicken pieces, a few at a time, in a deep fryer at 375 for 30 to 35 minutes.
