Zucchini Bread

  • 1 cup solid vegetable shortening, such as Crisco®
  • 3 eggs - beaten
  • 2 cups sugar
  • 3 cups peeled grated zucchini
  • 3 tsp. vanilla
  • 3 cups flour
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 cup raisins

Preparation -
In a large bowl, beat the shortening, eggs, & sugar together. Add the grated zucchini & vanilla. Combine the dry ingredients in a separate bowl. Add the dry mixture to the zucchini mixture. Stir in the raisins. Pour the batter into 2 greased and floured loaf pans. Bake in a preheated oven at 350º for 50 minutes. Remove from the oven and let cool for about 20 minutes, then remove the loaves from the pans. Place the loaves on a wire rack to cool.
