Crumb Cake

This is a basic, one layer coffee cake or breakfast cake.

  • 1/2 cup butter
  • 1 cup flour
  • 1 cup sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 large egg, lightly beaten
  • 1 cup milk

Preparation -
Combine the butter, flour, sugar, and salt. Mix together with fork or pastry blender to form crumbs. Reserve about 1/2 cup of the crumbs for the top of the cake; set aside. Add the baking powder to the remaining crumbs. Add the beaten egg and milk and beat well. Pour the batter into a lightly greased and floured 9" cake pan. Top with the reserved crumbs. Bake in a preheated oven at 350º for 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
