Chicken Curry

  • 2 cans (10-1/2 oz. each) cream of chicken soup
  • 1/2 cup Miracle Whip® salad dressing
  • 1 T. lemon juice
  • 1 T. curry powder
  • 2 pkgs. (10 oz. each) frozen spinach, thawed & well-drained
  • 8 boneless, skinless chicken breast halves
  • paprika
  • 12 oz. mild cheddar cheese - shredded

Preparation -
In a large bowl, mix the cream of chicken soup, Miracle Whip®, lemon juice, and curry powder together. Spray a 9" x 13" baking dish with non-stick cooking spray. Place the drained spinach in the prepared baking dish. Arrange the chicken breast halves on top of the spinach. Pour the soup mixture over the chicken. Sprinkle lightly with paprika. Scatter the shredded cheddar cheese evenly over top.  Bake in a preheated oven at 350º for 1-1/2 hrs.
