Stuffed Pork Chops

  • 6 (1-1/2" thick) lean, center cut pork chops
  • 6 oz. bread cubes
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1 T. parsley
  • 1 lg. egg - lightly beaten
  • 2 T. butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Preparation -
Spray a shallow baking dish with non-stick cooking spray; set aside. Slice each pork chop horizontally, to form a pocket in the middle. In a large bowl, mix all the ingredients together, except the pork chops. Stuff an equal amount of the filling mixture into the pocket of each pork chop. Arrange the stuffed chops in the prepared baking dish. Cover loosely with aluminum foil and bake in a preheated oven at 375 for about 50 minutes.
