  • pie dough for a 2 crust pie
  • 5 to 6 cups fresh, peeled peach slices
  • 2 egg yolks, lightly beaten
  • 1/2 cup melted butter
  • 1-1/2 tsp. vanilla
  • 6 T. flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 tsp. cinnamon
Preparation -
Roll half the pie dough and place it in the bottom of a deep dish 9" pie pan. Place the sliced peaches in the pie shell. Mix all the remaining ingredients together in a bowl. Pour the mixture over the peaches in the pie shell. Roll the remaining pie dough and place it on top of the pie. Trim the excess dough around the top rim. Press the dough together and flute the edge. Make several small spoke-like slits in the unbaked top crust. Bake in a preheated oven at 450º for 10 minutes. Reduce heat to 350º and bake for 35 to 45 minutes or until the filling is bubbly and the crust is golden brown.
