Country Brunch Breakfast
Lottie, Florida

 
  • 6 bacon strips
  • 6 cups hash browns (frozen cubes)
  • 1 tsp salt
  • 1/4 tsp pepper
  • 6 eggs
  • 1/2 cup shredded cheddar cheese

 

Cook bacon until crisp.  Drain, save 2 tablespoons of grease.

Add potatoes, salt & pepper to drippings.

Cook & stir for 2 minutes.

Cover & cook. Stir occasionally,  about 15 min.

Make 6 wells in potato mixture.

Break one egg in each well.

Cover & cook on low for 8-10 minutes.

Sprinkle with cheese & bacon.
