Goodmama's Moist Corn Bread

If you love corn bread but are tired of those recipes
 that yield a dry, crumbly texture, you'll love this recipe!

  • 3/4 cup corn meal 

  • 1 cup flour 

  • 1/3 cup sugar 

  • 1 tsp. baking soda 

  • 2 tsp. cream of tartar 

  • 1 cup nonfat plain yogurt or light sour cream 

  • 1/4 cup low fat milk 

  • 1 egg well beaten (or two egg whites) 

  • 2 tablespoons melted butter

Combine dry ingredients in a medium bowl. Mix all wet ingredients together first, then add to dry ingredients and mix just until moistened.

Spray an 8 X 8 in. casserole dish or 1 1/2 dozen muffin tins with Pam and then dust with flour. Pour batter in casserole dish or halfway fill muffin tins.

For casserole dish, bake in 425 degree oven for 20 minutes or until top is lightly browned and a knife inserted in the center comes out clean.

For muffins, bake in 400 degree oven 18 minutes.
