Goodmama's Wild Rice Casserole

  • 1 16 oz. box  Wild Rice (a mix of rices) 

  • 5 slices thick slab bacon 

  • 1 med. onion, diced 

  • 3 large cloves garlic, minced 

  • 2 stalks celery, diced 

  • 1/2 cup diced bell pepper 

  • 4 large or 8 small mushrooms, diced 

  • 1/2 cup turkey or chicken broth (not bouillon) 

  • 1/2 cup homemade turkey gravy (or a small jar of mushroom gravy or a 6 oz. can of  gravy) 

  • 1 tsp. Worcestershire Sauce 

  • ground pepper to taste (this will be somewhat bland unless you use a lot of pepper)

Soak wild rice overnight in a large bowl of water. Boil the rice 45 minutes;

Brown bacon; crumble; dump grease.

Sauté onion, garlic, celery, bell pepper in 2 tablespoons of olive oil until tender. Add mushrooms and sauté until mushrooms are cooked.

Mix together cooked rice, crumbled bacon, vegetables and all remaining ingredients. Pour into a casserole dish which has been sprayed with non-stick spray.

Bake in 325 degree oven 45 minutes or until liquid is absorbed. 

(Optional... last ten minutes dot top of casserole with little pats of butter -- not margarine.)
