Grilled Zucchini with Tomatoes, Savory and Thyme
Michelle, California

  • 2 1/2 cups sliced Zucchini (1/4 inch thick) 
  • 1 t chopped fresh savory 
  • 1 t chopped fresh thyme
  • 1 C coarsely chopped tomatoes (bite size) 
  • fresh ground pepper to taste.

Place zucchini in colander and sprinkle with salt. Let stand for 15 minutes. Rinse under cold water and pat very dry.  Place zucchini in heavy duty foil. Sprinkle with savory and thyme, place tomatoes on top and add pepper.  Seal edges tightly, then twist ends. BBQ or grill 4-5" from coals for 10 minutes, turn often.
