Sweet and Sour Pork Chops
Diane, Mississippi

 

  • 6 to 12 center cut (boneless) pork chops
  • 1 cup ketchup
  • 1 cup water
  • 2 tsps. sugar
  • 2 large lemons

Mix ketchup, water, and sugar in an electric skillet

Heat slowly while cutting lemons. Slice lemons so you will have one under each chop. Remove seeds. Place slices in sauce.

Wash and trim any fat from chops. Place on lemon slices in skillet;

Cook on low (225 deg. on thermostat) for one hour. Watch very carefully to make sure they don't burn.

Turn often, basting with sauce. Add more water if necessary.

 Cover during cooking. 

After cooking, move chops to serving plate. 

Remove lemon slices and discard. 

Turn skillet on high and stir constantly . Reduce until sauce coats the back of a spoon. 

Serve on chops or on the side as a dipping sauce.
