Mexican Casserole
Jody, Texas

  • 2lb. ground beef or turkey
  • 1 medium onion, chopped
  • 2 tsp. cumin
  • salt & pepper to taste
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can chopped tomatoes and chilies
  • 1 can chopped green chilies
  • 1 cup milk
  • tortilla chips
  • grated cheese

Combine ground meat, onion and spices and cook in skillet until brown and tender.  Drain off any grease.

In a large bowl combine soups, tomatoes and chilies and milk to make sauce.  

Line the bottom of a 13 x 9 baking dish with chips.  

Cover Chips with meat mixture

Pour sauce over top and sprinkle heavy with grated cheese

Bake at 325 for about 20 minutes or until bubbly and hot through.
