Warm and Cozy Soup
Laila, Canada

Serves 2 people.

  • 1/4 cup white or red beans, cooked or dry (If you use dry beans, soak them in water overnight.)
  • 3 tbsp. vegetable oil or olive oil
  • 1 chopped onion
  • 1 garlic clove, crushed
  • 1 slice of bacon
  • 2 tomatoes, peeled, seeded and finely chopped
  • 4 cups skimmed chicken broth or water
  • 1/2 tsp fresh marjoram or basil, chopped
  • 1 pinch fresh thyme, chopped
  • 1 carrot, diced
  • 1 potato, diced
  • 1/2 turnip, diced
  • 1 celery stick, finely chopped
  • 3/4 cup cabbage, sliced
  • 1/4 cup cut macaroni or small pasta
  • 1 tbsp fresh parsley, chopped
  • salt and pepper to taste
  • grated parmesan to taste

In a saucepan, over medium-high heat, sauté the onion, garlic and bacon in oil for a few minutes. 

Add the tomatoes and the beans. 

Mix in the chicken broth or water, season with marjoram or basil and thyme. 

Cover and simmer for approximately 1 hour. 

Add the carrot and cook for 10 min. 

Add the potato, turnip, celery, cabbage and pasta, cook until vegetable and pasta are tender. 

Season, sprinkle with parmesan and garnish with parsley.
