Baked Potato Soup
Troi, Florida

  • 1/4 c instant potato flakes    

  • 1/2 cup margarine 

  • 1 can chicken broth            

  • 1/2 c flour 3 c milk                       

  • 3 large baked potatoes, peeled & cubed 

  • 1/4 tsp garlic powder          

  • 1/4 tsp white pepper 1/4 tsp sugar                  

  • 1/4 tsp black pepper   

  • 1/4 tsp salt 

Blend chicken broth and instant potatoes.  

Melt margarine, add flour and brown lightly.

Stir in milk. 

Add potatoes & broth mix.  

Add diced potatoes, garlic, white pepper, black pepper, sugar and salt.  Stir well. 

Simmer until desired thickness. 

Top with shredded cheddar cheese, crumbled bacon & chives.

 I have also added a couple cans of creamed corn also, and this makes a very hearty, winter soup.
