Cantonese Noodle Soup
Laila, Canada

  • 1 cup sliced mushrooms

  • 1/2 tsp garlic, finely chopped 

  • 1 tbsp butter

  • 3 cups skimmed chicken broth

  • 1 cup fresh Chow Mien or regular noodles

  • 1 tbsp lemon juice or fruit vinegar 

  • 1 trickle hot pepper sauce or chili oil (optional) 

  • 1/4 cup green onion, chopped 

  • 1 tbsp fresh coriander, chopped 

  • 1 tsp fresh ginger, chopped 

In a sauce pan, sauté the mushrooms and the garlic in butter over high heat for 2 min.

 Add the chicken broth and bring to boil. 

Add the noodles, lemon juice or fruit vinegar, and hot pimento sauce or chili oil (optional). 

Reduce heat, cover and simmer for 3 min. 

Add the green onion, coriander and ginger. 

Serve immediately
