Baked Bean Casserole

This is a really quick, filling casserole. My mother used to spend all day cooking this casserole from scratch. She would put it in her biggest pot and slowly cook it all day long.

When I was a working mom with 2 kids and hubby working in another town, I longed for some of my mom's old favorites. But, I didn't have the time to make it like she did. I stumbled across canned baked beans that were as good as my mother's. Well, from there it was just a hop, skip and a jump to my Quick Baked Beans Casserole!

You need:  

  • 1 pound of ground beef

  • 1 28 ounce can of Bush's Original Baked Beans

That's it. That's all. Boy! Wasn't it hard to find all of those ingredients? :)

First off, brown your ground beef. I do mine in the microwave, it's just faster and an easier cleanup, in my opinion. I will tell ya how at the bottom of this recipe.

Now, drain the beef thoroughly. (I put my grease in a bowl and then pour it into the Baked Beans can when I am all through with the can. I then put it in the fridge to get it to "set" and then put it in a plastic grocery sack and throw it out.)

Put the beef in a large microwaveable bowl, crumble it up really well. Open the can of baked beans and put them in with the beef. Stir it up well. Cover your bowl with wax paper or a paper towel and put it in the microwave.

Microwave it on high for about 5 minutes. Stir it well and zap it for another 5 minutes. Do this once more. Okay, it's cooked. Let it sit for about 5 minutes to let the heat go all the way through and to let the flavors meld.

Now, you can serve it. It's sooooo good and really didn't take long at all, did it? My family loves this with a good mixed salad and a fresh loaf of French bread. 


TO BROWN YOUR BEEF IN YOUR MICROWAVE:

Put the beef in a microwaveable bowl. Stir it around a bit with a fork or spoon. Now, put a paper towel over it and place it in your microwave. Cook it on high heat for about 2 minutes. Take it out and stir it again,  breaking up the pieces as ya go. Zap it for another 2 minutes. Take it out stir it yet again. Repeat these two steps until the beef is thoroughly cooked, DO NOT LEAVE ANY OF IT PINK!

That's it. Usually takes me about 10 minutes to do a pound and a half of ground beef.
