Lemon Lush

This is the perfect desert for summer gatherings.  It's cool and delicious!

For the crust:  

  • 1 1/2 sticks of butter (margarine can be used, but butter is better.)

  • 1 1/2 cups of  flour

  • 1/2 cup chopped walnuts

Mix all well and press into a 9 X 13 inch baking pan and bake in a 350 degree oven for 15 minutes. Cool completely before proceeding to next step.

For the 1st layer: 

  • 2 8 oz. packages of 1/3 less fat Philadelphia Cream Cheese
  • 2 cups powdered sugar
  • 2 cups (1/2 of a 16 oz. container) Cool Whip

Mix well and when smooth spread carefully over crust.

For the 2nd layer:

  • 2 sm. packages instant lemon pudding
  • 3 cups low fat milk

Beat for a few minutes on low speed until pudding is thick. Carefully spread on top of cream cheese layer.

Last later:

Top with more Cool Whip (perhaps about 2/3 of what you have left)

Refrigerate and cut into squares when ready to serve. This is TOO DELICIOUS!!!
