Quick Chili Rice Dinner
Jess, Rhode Island

 This is a great, quick alternative to traditional chili. 

  • 1 lb.  ground beef 

  • 1\2 cup chopped onion 

  • 1tbs. dry mustard 

  • 1 10oz. pkg.  frozen corn 

  • 1 cup diced red/green peppers 

  • 1 15oz. can tomato sauce 

  • hot pepper sauce to taste 

  • 1 cup minute rice 

  • shredded cheddar cheese to top chili.


 Brown beef and onion in a large skillet.  

Add remaining ingredients except rice and cheese.  Cover and bring to a full boil, stirring occasionally. 

Cook rice then add to mixture.  

Reduce heat, cover and simmer for 5 minutes. 

Serve topped with shredded cheese. 

**Note:  use as little or as much hot pepper sauce as you like.  The more you add and the longer you let the chili simmer, the hotter it will be.
