Chicken Enchilada Pie

  • 4 chicken tenders or 2 chicken breasts, cooked and diced ($2.50)

  • 1 16 ounce can of pinto beans (.50 cents)

  • 1 cup of shredded cheddar (1.25)

  • 1 cup of Picante Sauce (store brand - $1.00/bottle)

  • 1 Cup of Baking Mix (Bisquick or Pioneer) (about .50 cents)

  • 3/4 cup of milk (.50 cents)

  • 2 tablespoons of melted butter (.25 cents)

Preheat your oven to 425 degrees.

Lightly grease a 2 quart baking dish - flat is better than a deep casserole dish.

Throw in the diced chicken, pinto beans (undrained), picante sauce and cheese.  Stir well.

In a small mixing bowl, mix the baking mix, milk and melted butter.  Stir well.  Pour this over the chicken mixture.

Bake at 425 for about 30 minutes.  

Serve with raw veggies or a salad.
