Danish Layer Cake

  • 3 eggs

  • 3/4 cup white granulated sugar

  • 1/2 cup all-purpose flour

  • 1 tsp baking powder

Whisk the eggs and sugar together until fluffy. Mix the flour with the baking powder and sift it to the egg mixture. Mix well. Pour evenly in three (3) GREASED 8" round baking dish. (They will be thin. Move the dish to make sure the whole dish is covered.) Bake in a PRE-HEATED oven at 400F for about 6 to 8 minutes until golden brown.
Cover a cooling rack with wax paper and sprinkled with granulated sugar. Cool the sponge cake on top.

To assemble the cake, use your imagination:

Skin off peach and mash it. Mix with either plain yogurt or whipped cream. Put one layer of cake in a cake platter, cover with half of peach mixture, put another layer of cake and the rest of the peach mixture on top of the second cake. Top it off with the last cake and decorate it with whipped cream and peach slices.

Other variation:
Mashed banana. Instead of peach use banana.

Other fruits: Strawberries, raspberries or whatever your heart desires! Or use more than one kind of fruits.
