Lazy Daisy Oatmeal Cake

Cake:

  • 1-1/4 cups boiling water 

  • 1 cup Quaker Oats (quick or Old fashioned, uncooked) 

  • 1/2 cup butter or margarine, softened 

  • 1 cup granulated sugar 

  • 1 cup firmly packed brown sugar 

  • 1tsp. vanilla 

  • 2 eggs 

  • 1-1/2 cups sifted all-purpose flour 

  • 1tsp. soda 

  • 1/2 tsp. cinnamon 

  • 1/4 tsp. nutmeg

Frosting:

  • 1/4 cup butter of margarine, melted 

  • 1/2 cup firmly packed brown sugar 

  • 3Tbsp half and half 

  • 1/3 cup chopped nutmeats 

  • 3/4 cup shredded or flaked coconut

For cake:

Pour boiling water over oats; cover and let stand for 20 min. 

Beat butter until creamy: gradually add sugars and beat until fluffy.  

Blend in vanilla and eggs.  

Add oats mixture; mix well.  

Sift together flour, soda, salt, cinnamon, and nutmeg.  

Add to creamed mixture.  Mix well.  

Pour batter into well greased and floured 9-ich. square pan.  

Bake in preheated moderate over (350 degrees) for 50-55 minutes.  Do not remove cake from pan.. 

For frosting:

Combine all ingredients.  Spread evenly over cake.  Broil until frosting becomes bubbly.  Cake may be served warm or cold.
