Grilled Eggplant or Zucchini
Kelly, Italy

In a bowl mix together 

  • 1/4 cup of good olive oil (you could also use melted butter if you are a butter person!!)

  • 2 cloves of garlic pressed or chopped up fine

  • a handful of parsley chopped up fine

  • 1 tsp. salt

  • a dash of black pepper

Thinly slice longwise zucchini and/or eggplant.  

Put the slices on the grill.  Turn after about 3 minutes

Now on a plate, put a layer of zucchini, brush on the sauce, layer of zucchini, brush of sauce, and so on and so on.

This can be eaten hot or cold.
