Peach Cobbler

  • 6 cups peeled, sliced peaches or sliced nectarines (or mix) 
  • About 1 cup sugar 
  • 3 T cornstarch 
  • tsp. ground nutmeg 
  • tsp. vanilla 
  • 1 T lemon juice 
  • 1 T. butter or margarine 
  • Biscuit dough 
  • Milk

Preheat oven to 450 F. Place peaches in a large bowl. In a small bowl, combine 1cup sugar, cornstarch and nutmeg. Add to peaches with vanilla and lemon juice; mix thoroughly. Spoon peach mixture into a shallow 1 quart baking dish (if using 8 cups, use 9 x 13 pan); dot with butter. Set aside.

Prepare Biscuit dough and pat to inch thickness on a lightly floured board. Using a 2-3 " cookie cutter, cut out shapes and place about 1" apart on top of fruit. Brush dough with milk; sprinkle with sugar.

Bake for 10 minutes. Reduce heat to 400 degrees F and continue to bake until fruit is bubbly and biscuits are browned on top (about 25 more minutes). Place on a rack and let cool for at least 15 minutes; serve warm. Makes 6-8 servings.
