Fresh Plum Pie

  • Plain Short Pastry for 2-crust pie 
  • 1 tsp. grated lemon rind 
  • 4 cups sliced fresh plums 
  • 2 tsp. lemon juice 
  • 3 T. flour 
  • tsp. cinnamon 
  • to 1 cup sugar 
  • 1 T. butter or margarine

Line a 9" pie pan with bottom pastry crust. Mix plums with all remaining ingredients except butter. Pour into pie pan. Dot with butter. Adjust top crust. Bake at 425 for about 35-40 minutes.
