Perfect Meringue for Lemon Pie
Teach, California

Have egg whites at room temperature before beginning.

  • 3 egg whites
  • 1/2 tsp vanilla
  • 1/4 tsp cream of tartar
  • 6 Tbsp sugar

Beat egg whites with vanilla and cream of tartar until soft peaks form.

Add sugar gradually beating until stiff, glossy peaks form and all sugar is
dissolved. 

Spread meringue over hot filling, sealing to the edge of the pie
crust. 

Bake at 350° for 12 to 15 minutes, or until meringue peaks are golden.


Cool.
