Prize-Winning Goleta Lemon Festival Pie

  • 1 1/2 cups sugar 
  • 3 tbsp cornstarch 
  • 3 tbsp all purpose flour 
  • dash salt 
  • 1 1/2 cups water 
  • 3 slightly beaten egg yolks 
  • 2 tbsp butter 
  • 2 tbsp lemon zest 
  • 1/3 cup fresh lemon juice

1 9-inch baked pie crust (click here for recipe)  Meringue (3 egg whites; click here for directions)

Preheat oven to 350

In a saucepan, whisk cornstarch, flour, sugar, and salt. Add water and lemon juice. Stir until smooth.

Add egg yolks and whisk to blend. Cook over medium heat until thick and boiling, then continue cooking 8 minutes after boiling. Whisk constantly.

Add butter and lemon zest, mixing well.

Pour into pastry shell. Spread meringue over the filling, sealing it to the edge of the pie crust.

Bake at 350 for 12-15 minutes. Cool before cutting.
