Fresh Broccoli Salad

1 lb. fresh broccoli
2 tablespoons white wine vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1 tablespoon sesame seeds, roasted (see note below)

Cut broccoli into bite sized pieces. Use the stalk too, but peel it first. Steam the broccoli until JUST FORK TENDER (don't overcook). When done, drain broccoli and then immerse immediately into a bowl of ice water to stop the cooking process. When cold, drain and set aside.

To toast the sesame seeds, place a frying pan on a medium high heat. Add sesame seeds and stir or toss constantly until the seeds are a light golden brown and release a toasted aroma. Remove immediately to a cool plate.

To make the dressing, combine remaining ingredients and add the toasted sesame seeds. Mix well and then toss with broccoli.

You can make this salad early in the day for use later, but toss again just before serving.
