Stuffed Bell Peppers

  • 8 large bell peppers -- tops & seeds removed 
  • 1 lb. ground turkey 
  • 1 cup onion -- chopped 
  • 1 tablespoon fresh parsley -- minced 
  • 3 large cloves garlic -- minced 
  • 1/2 teaspoon dried thyme 
  • 3/4 teaspoon salt 
  • 1/2 teaspoon pepper 
  • 1/2 teaspoon basil 
  • 1/8 teaspoon cayenne pepper 
  • 1 1 lb. can tomatoes (* see note) 
  • 2 1/2 cups cooked rice 
  • 2 tablespoons Worcestershire sauce 
  • 1/3 cup cheddar cheese -- grated 
  • 1/3 cup Parmesan cheese -- grated

Place hollow peppers in a baking dish.

Cook ground turkey and onions until onions are tender. Remove any excess fat.

Add # 4 - 10 and cook over a low heat for a few minutes.

Squish tomatoes, breaking into little pieces, but reserving all liquid. Add tomatoes and liquid to the meat. Add cooked rice and Worcestershire sauce, mix well, and cover and simmer 10 minutes.

Remove from heat and stir in #14-15.

Stuff peppers with meat mixture.

Bake in 350 degree oven approximately 30 minutes, or until peppers are tender.
