Easy Roast Chicken

This takes about 5 minutes to prepare and 1-1/2 hours to bake. Everyone will think you slaved, don't let them know your secret!

Oh, I also do this with my turkeys for the holidays... only I double it.

  • 1 whole chicken
  • 1 lemon 2 cloves garlic

Preheat your oven to 350.

Wash your chicken (no soap! LOL!). Remove the bags of pieces-parts (Ewwww! I hate this part!) and throw them away or give them to your favorite cat. (no bones, please!)

Wash your lemon. Then take a knife and cut both ends off of the lemon (about the size of a dime) and then "Score" or cut the lemon skin but not all the way through the lemon.

Put the lemon in the chicken. Which end do you put the lemon, ah come on - the big end of course! LOL!

Crush the garlic. Just how do you do that, you ask! Put the garlic on a cutting board, using the back of a spoon, press down on the garlic - crushing it. Don't use a knife like they do on those fancy cooking shows, I had to have 5 stitches after trying that one, and it just ruined our dinner! Oh, and it helps to have a catcher if you do this on an island, as mine sometimes goes shooting off!

And put the crushed garlic in the chicken.

Put the chicken on a sheet cake pan or a roasting pan or any large size pan that has sides to catch the grease. I prefer a broiler pan, the grease goes down to the bottom and does not surround the chicken making it greasy! Yuck!

Bake it for 1 & 1/2 hours.

Take it out of the oven, put it on a pretty platter, secretly remove the lemon and serve. Everyone will think you slaved for hours, not just a few minutes!
