Beef and Broccoli Stir Fry

(4-6 servings)

  • 1 1lb boneless tender beef steak (Sirlion, rib eye, top loin)
  • 2 TB cornstarch
  • 8 TB Soy sauce, divided
  • 2 tsp sugar
  • 2 tsp minced fresh ginger root
  • 2 cloves garlic minced (1/4 tsp garlic powder)
  • 2 lbs fresh broccoli
  • 2 1/2 C water
  • 8 tsp cornstarch
  • 6 TB vegetable oil divided
  • 2 onions, cut into chunks
  • Hot cooked rice

Cut beef across grain into thin slices. 

Combine 2 TB each corn starch and soy sauce w/sugar, ginger and garlic in a small bowl.  Stir in beef. Let stand 15 minutes. 

Meanwhile, remove flowerets from broccoli; cut in half lengthwise. Peel stalks, cut crosswise into 1/8 inch slices. 

Combine water, cornstarch and remaining soy sauce; set aside. 

Heat 2TB oil in hot wok or large skillet over high heat. Add beef and stir fry 1 minute; remove. 

Heat remaining oil in same pan. Add broccoli and onion; stir fry 4 minutes. 

Stir in beef and soy sauce mixture. 

Cook and stir until mixture boils and thickens. 

Serve immediately over rice.
