Spiced Shrimp

My father-in-Law makes this every Christmas. It's to die for!

  • 1 lb cooked shrimp, cleaned 
  • 3 medium onions, thinly sliced. (red onions work the best)
  • 1 lemon, sliced 
  • 1/2 cup white vinegar 
  • 1/4 cup water 
  • 2 Tsp salt 
  • 1 Tsp sugar 
  • 1/2 Tsp dry mustard 
  • 1/4 Tsp ground ginger 
  • 4 black peppercorns 
  • 1 bay leaf
  • 1 spurt of Tabasco (optional) 
  • 1/4 cup fresh lemon juice
  • 1/2 cup corn or peanut oil

Arrange and alternate layers of shrimp, onions, and lemon slices in a shallow bowl.

Combine remaining ingredients, EXCEPT juice and oil in a sauce pan and bring to a boil.  Cover and simmer for 5 minutes let cool, then strain. 

Add lemon juice and oil, stir and pour over shrimp.

Cover with plastic wrap and chill 24 hours stirring now and then 

Drain and serve.
