Jody's Chili
Jody, Texas

  • 3lb.ground chuck 

  • 1 med. chopped onion

  • 2-3 pks.of your favorite chili mix (I use 2 Alarm and make mine hot!) 

  • 4 sm. or 2 lg. cans tomato sauce 

  • 2 lg. cans ranch style beans 

  • 2 envelopes onion soup mix 

  • 1/2-1 can of beer (any brand) 

  • 8oz.cream cheese 

  • 8oz.velveeta cheese 

Brown the beef and chopped onion together, drain. 

In a large pot, combine browned beef and onion, chili mix, tomato sauce, beans, onion soup mix,1/2 can of beer. 

Cook slowly on low heat for at least an hour. At this point taste it to see if you'd like to add the rest of the beer, if so, do it now.  

You may cook it as long as you like. The longer the better. 

When you are about ready to serve the chili, add the cream cheese and Velveeta, mixing constantly so it doesn't stick. Continue to mix until the cheeses are melted.  

This is a creamy textured chili, and it tastes great!   It freezes very well!
