Blueberry Banana Muffins 
Laura, Indiana

  • 2 extra ripe bananas 
  • 2 eggs 
  • 1 C packed brown sugar 
  • 1/2 C margarine, melted and cooled 
  • 1 C blueberries 
  • 1 tsp. vanilla extract 
  • 2 1/4 C flour 
  • 2 tsp. baking powder 
  • 1/2 tsp. ground cinnamon 
  • 1/2 tsp. salt 

Preheat oven to 350. Grease or line 12 muffin cups.

Puree bananas in blender (or chop well in mixer) (1 cup).

Combine bananas, eggs, brown sugar and margarine in medium bowl until well blended.

Stir in blueberries and vanilla.

Combine flour, baking powder, cinnamon and salt in a large bowl.

Stir banana mixture into flour mixture until evenly moistened.

Spoon evenly into prepared muffin cups.

Bake 25-30 minutes or until wooden toothpick comes out clean.

Remove from pan and serve warm.
