Chocolate Dipped Crystallized Ginger

  • Crystallized ginger chunks (can be bought almost anywhere you can get other dried fruit) 

  • Wilton's candy melts (dark or milk chocolate tastes best) 

Melt about a 1/3 cup of candy melts in a micro safe mug for about 20-30 sec. Take out and stir and put back in for another 10-20 sec or so. Than take out and stir until completely melted. Be careful not to overheat as it can burn VERY easily. 

Then using 1-2 at a time place ginger chunks in chocolate and roll with a fork to coat evenly. 

Place coated ginger on a wax paper lined something (cookie sheet, plate, whatever will fit in your fridge) and place in fridge 'till no longer glossy and set. 

Try to use up as much of the chocolate as you can then let it harden (you can put it in the freezer to speed this up) and add more melts before trying to re-melt it, otherwise it will burn. 

You can also dip pretzel rods, cinnamon sticks (for hot cocoa stirrers), other dried fruit, nuts, caramels - almost anything!! 

Try dipping rippled potato chips - sound gross but is actually very good.
