Spicy Rapid Roast Chicken

  • 1 whole chicken

  • 1 T olive oil

  • 1/4 tsp salt

  • 1/4 tsp ground black pepper

  • 1/4 tsp dried oregano

  • 1/4 tsp dried basil

  • 1/4 tsp paprika

  • 1/8 tsp cayenne pepper

Preheat oven to 450 degrees.  Rinse chicken thoroughly inside and out under cold water, remove all fat.  Pat dry with paper towels.  Put chicken into a small baking pan.  Rub with olive oil. Mix the spices together and sprinkle over chicken.

Roast the chicken in the preheated oven for 20 minutes.  Lower the oven to 400 degrees.  and roast until done.  Let cool 10-15 minutes before serving.
