Meatloaf with Mozzarella
Valkyrie, Japan


  • 1/2 cup tomato juice 

  • 1 cup of bread cubed (3 slices)
  • 2 lbs ground beef
  • 1/4 cup chopped onions
  • 1/4 cup chopped celery
  • 2 eggs beaten
  • 1 tsp oregano
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz mozzarella sliced
  • 2 cups bottled marinara sauce

Preheat oven to 350 F

In large bowl, combine tomato juice and bread.  Let this stand for 10 minutes.

Add rest of ingredients except cheese and sauce.  Mix well.  

Measure out a sheet of wax paper that is approximately the size of a baking sheet. 

Put the meat mixture on the wax paper and flatten it  into a 12x8 inch rectangle.  

Arrange cheese lengthwise down center.

Using wax paper to lift meat, roll up jelly roll style.  Be sure to remove the wax paper.

Pinch the edges to seal it well.

Bake 35-40 minutes or until firm.  Serve with heated sauce.
