Cottage Meat Loaf
Valkyrie, Japan

  • 1 1/2 lbs ground beef
  • 1/2 cup of ketchup
  • 1/3 cup tomato juice
  • 1/2 tsp each salt & pepper
  • 1/8 tsp red pepper
  • 2 eggs beaten 
  • 3/4 cup of breadcrumbs 
  • 1/4 cup chopped onions 
  • 2 tsp mustard
TOPPING 
  • 1/4 cup ketchup 
  • 1/2 tsp mustard 
  • 2 tsp brown sugar

Preheat oven to 400F.

In large bowl combine all ingredients except topping until blended.  

Line a 9x5 inch loaf pan with foil.  

Press the beef mixture into the loaf pan.

In separate bowl, combine topping ingredients.  Mix well.  Spread this over meatloaf.

Bake for 35-45 minutes. Drain the fat.  Rest the meatloaf 5 minutes before serving.
