This is a book of recipes of some tasty dishes. Right now there are not many but now and then I add more. While enjoy these ones...

Sugar cookies

Take 1 cup of sugar and mix it with boiling milk or water (1/3 of cup). Then add some melted butter (50-100 g. or ½ a stick)) and 1 cup of sour cream. Add 1 teaspoon of baking soda mixed with lemon juice or vinegar. Add flour (4-6 cups). Mix the soft dough, roll it on the table and cut cookies with a wine glass. Bake them in the oven at 350 degrees for about 15-20 minutes. Enjoy delicious taste!

Apple cake

Dough: 2 eggs, 1 cup of sugar, 1 pinch of salt, 1 cup of sour cream. Mix all ingredients together. Add baking soda dissolved in 1/4 cup of lemon juice. Then add 1.5 to 2 cups of flour. The dough is ready. For the final touch you can add a pinch of cinnamon. At the end add a handful of raisins and chopped nuts. Raisins and nuts are optional. Meanwhile heat the oven and grease the baking pan with butter. Cut 3 apples and put the pieces on the bottom of the pan. Pour dough on apples and put the pan into oven. Bake at 350 F. for about 45 minutes.

Huevos rancheros

You'll need one large tomato, 4 fresh eggs, one small onion (for two portions). Chop the onion fine and saute in a little butter; cut the tomato in bite-sized chunks and add to the sizzling onions: break in the eggs after lowering the heat. Serve when the egg is congealed - don't cook too much. That's all there is to it.
You can add fried bacon on the side or fry the bacon crisp and chop it into the egg mixture. This dish is especially good for breakfast or as a light snack.

Peppers (tomatoes) rellenos

For this tasty dish you'll need peppers (you can use chili pepper if you like hot meal) or tomatoes and special filling. To prepare filling (this quantity is measured for 4-6 peppers or tomatoes) mix about 1 measure cup of cooked rice, 1 small chopped onion, 4-5 tsps. of corn, cheddar cheese, 1 tsp. of mushrooms or 3-4 tsps. of canned meat or even fish (tuna or salmon), butter, a punch of cumin, curry, salt or other spices that you like. Mix all the ingredients slightly (don't make a smooth mass!). Prepare peppers and tomatoes: cut the very top of the vegetables and then take off the middle part with a spoon. Stuff them with the prepared filing and put in the baking form or frying pan. Pour some oil in it. If there is some mass left, put it in the same pan. Cover it with the foil and put into the oven. Bake for about 45 min. at 350-400 F. It's delicious with canned green peas and red wine.

Eclairs (cream puffs)

Eclairs, cream puffs or pate a choux are a pastry made from cooked dough and filled with pastry filling. To make dough you'll need about 75 g. (3/4 stick or 6 tbsp.) of butter, 1 cup of water, 1 cup (5 ¾ oz.) of flour and 4 large eggs (or 4 eggs and 2 egg whites, in other words, 1 cup of eggs). Put butter and water in the pan and heat to boil. Then add flour all at once and with a spatula stir the mixture vigorously over a low heat until it forms a paste. Knead until the paste is no longer sticky to the touch. (Meanwhile preheat the oven to 375 F.) Remove from the stove and allow mixture to cool until just warm (about 5 minutes). Add eggs, one at a time till the mixture is perfectly smooth. The dough is ready. Take it by a teaspoon (or use a piping bag) and put these small pieces on the baking sheet covered with parchment paper so the pastry won't stick. Bake at 425 F. for 15 minutes. They will rise but don’t take them out of the oven yet. Reduce the heat to 350 F. and bake for another 10 minutes. Remove from the oven and while they are still hot cut them on the side with a knife (they should be empty inside) and fill with pastry cream, custard or just vanilla pudding.
Note. You can make these pastries in the form of mushrooms. Make the pieces like hats and put small pieces in the form of little sticks - they'll be legs. They should not be filled with cream.
For the pastry filling just take 1 cup of heavy whip cream and whip in a mixer, add 1 cup of sugar and 1 tsp. of vanilla extract. It's very easy to make and no hassle.
For the final touch put some chocolate on them. To make a chocolate (it's a special kind of liquid chocolate for which you don’t need commercial chocolate bar or chips) put 2 tbsp. of sour cream, 2 tsp. of cocoa powder, 3 tbsp. of sugar and 1 tbsp. of butter in the pan and bring to boil. While still warm, put it on the éclairs or cream puffs. What a feast!

Birds' Milk

Ingredients for the dough: 150 g. of melted butter, 1 cup of sugar, 3 eggs, 1 tsp. of soda (dissolved in vinegar or lemon juice), 1 cup of flour. Mix all the ingredients, make 2 parts and put 3 tsp. of powdered cocoa in one of them. Bake 2 cakes, time of baking is approximately 35 min. at 350 F. Then when they get cooled, cut each of them in half with a thread or knife.
Filling: 300 g. of butter, 1.5 cups of sugar. Cook porridge from 2 cups of milk and 3 tbsp. of semolina. When it cools add lemon juice and grated peel from 2 lemons, butter and sugar. Cool in refrigerator for 20 min.
Chocolate: Boil 2 to 5 tbsp. of sour cream, 2 tsp. of cocoa and 3 tbsp. of sugar till getting thick. Add 1 tbsp. of butter and boil till thick again.

Caesar Salad

Ingredients: romaine lettuce, grated Parmesan cheese, croutons, pieces of chicken (optional).
Dressing: 1 part of mayonnaise, 1 part of sour cream, garlic, salt, pepper, vinegar, oil.

Devilled eggs

Ingredients: 4 eggs, 1 tbsp. mayonnaise, 1/4 tsp. sugar, a pinch of salt, 1 tsp. pickle juice, 1/2 tsp. brown mustard. Boil 4 eggs hard and take yolks out. Mix yolks with other ingredients and put the filling back into eggs. Very tasty.

Tuna (salmon) sandwiches

It is an improved variety of crudities (a French sandwich). 1 can of drained tuna or salmon, 3 tbsp. of mayonnaise, 2 green onion (and/or a piece of bulb onion) finely chopped. Mix all the ingredients. Make toasts from the bread you like and put tuna mass on the toasts. You can eat them like they are or bake them for 3-5 minutes.

Greek sandwiches

Make toasts from the French bread (or any bread you like). Put slices of cheese (cheddar, Monterey Jack or whatever cheese you like) and cover with slices of tomatoes. Slightly dust with salt. You can add lettuce or slices of cucumber if you wish. This is my favourite sandwich.
