SWEETS AND CANDIES
Sweets during the Western Expansion era were considered a treat. Before the Winter, when the needed amount of vegetables were stored away, the extra vegetables were boiled. The juices were then extracted to be used in sweets and candies. The natural sugars from the vegetables made the candies sweet and delightful. That was until white sugar became a product of the vallies. Honey was used among the early settlers as a sweetener when sugar was not availiable. Jabez Durfee came to Utah in 1850. While living in Springville he planted a large orchard and was the keeper of many hives of bees. He sold the extra honey to settlers for pies, cakes, and cookies.
