Oat Cakes (cookie like)

1 1/2 cups oat flour (you can substitute wheat flour, but they are OATcakes :o] )
1/2 tsp. baking powder
1/2 cup brown sugar (for sweeter cakes use up to 1 cup)
3/4 cup butter (unsalted), you can sub margarine but it's a bit salty
1 egg
1 cup mashed ripe fruit (bananas, peaches, something soft)
1 3/4 cup rolled oats
1/4 tsp. EACH of the following spices: nutmeg, cinnamon or cardamom by itself
1/2 cup chopped nuts (optional)

Mix flour, baking powder and brown sugar together, make sure to mash any lumps.
Cut butter into mixture with a pastry blender (or make do with a fork).
Add egg and fruit, and nuts if desired.
Drop rounded Tablespoons of dough onto greased cookie sheet (about 2-3" apart).
Bake at 350 degrees F (175 degrees C) for 15 minutes or until cookies look "dry".

2 1/4 cups oat flour
3/4 cup oats (Quick oats make the cake a bit softer)
3/4 cup packed brown sugar
3/4 cup molasses (or maple syrup, careful, no Aunt Jemima)
3/4 cup water
2 eggs
3/4 cup vegetable oil
1/4 tsp. ground cloves
1/2 tsp. pumpkin pie spice
1/4 tsp. nutmeg
pinch of salt

Preheat oven to 350 degrees F (175 degrees C). Grease and flour bundt type pan or 13x9.
Combine all ingredients and blend well, then beat for about 3 minutes by hand or 2 minutes by mixer on high.
Bake for 50-60 minutes for bundt pan or 30-40 minutes for 13x9 pan.
