Bertha Bixby's Recipes

Bertha (Hoffman) Bixby (1897-1995), was the only great-grandparent that I ever met. She was known to her grandchildren as "Grandma Bixby" and to me and I think my siblings as "Greatmom". One of the things that I remember the most about her is her cooking, of which she certainly did a lot. Listed here is several of her most enduring recipes that will be a treasure for generations of her descendants.


Orange Cookies:

These are my favorite. Whenever we would drive down to Portland to visit, she would always have these cookies ready for us.

Ingredients:
1 Cup butter
1 1/2 Cup brown sugar
2 eggs
1 Teaspoons vanilla
3 Cups flour
1/4 Teaspoon salt
2 Teaspoons baking powder
1 Cup buttermilk
1 Teaspoon baking soda
1 Tablespoon orange rind

Icing Ingredients:
2 Cups powdered sugar
3 Tablespoons orange juice
3 Tablespoons melted butter
1 Tablespoon orange rind

Cream the butter and brown sugar. Add the eggs and vanilla. Combine flour, baking powder, baking soda and salt. Add dry ingredients alternately with buttermilk. Bake at 350 degrees for 10-12 minutes. After cooled, apply icing to the top of each cookie.


Rice Pudding

Ingredients:
1 1/2 Cup boiled rice
2 eggs
1/2 Cup sugar
1/2 teaspoon salt
2 Cups milk
nutmeg

Beat eggs. Add sugar & salt, stir well, then add milk. Put in buttered baking dish, sprinkle with nutmeg. Set in a pan of hot water 350 degrees – 1 hour


Chocolate Chip Cake

Ingredients:
1 Cup Water
1 Cup cut up dates
1 Teaspoon soda
1 Cup shortening
1 Cup sugar
2 eggs
2 Tablespoons cocoa
1 ½ Cup flour
salt
vanilla
chocolate chips
nuts

Boil the water and add the dates and soda. Let cool. Mix together the rest of the ingredients (except nuts and chocolate chips). Bake at 350 degrees for 10 minutes. Cover with chocolate chips and nuts. Bake for 35 more minutes.


Cupid's Christmas Bread

Ingredients:
1 yeast [that's all the recipe says]
½ cup warm water
1 cup milk scalded
1/3 cup fat
1/3 cup brown sugar
2 teaspoon salt
1 egg beaten
4-4 ½ cups flour
1 cup oats
½ cup nuts

Soften the yeast in warm water. Pour milk over fat, sugar and salt. Cool. Stir in 1 cup of flour and beat together. Add yeast and eggs. Fold in oats and nuts. Add rest of flour. Knead. Let rise until double in size. Punch down the rest. 10 minutes. Make round loaves. 370 degrees for 10 minutes or 350 degrees for 30 minutes.


Bread and Butter Pudding

Ingredients:
4 slices bread
2 tablespoons soft butter
¼ Cup raisins
2 Cups milk
Vanilla
½ Cup sugar
2 eggs
1 egg yolk

Preheat oven to 350 degrees. Butter the bread & cut each into 4 pieces. Arrange in buttered dish. Sprinkle with raisins. Scald milk with sugar, add vanilla. Gradually pour into eggs mixture, stirring vigorously. Pour over bread. Bake 25 minutes.


Butterscotch Sauce:

Ingredients:
½ Cup Packed brown sugar
2 Tablespoons corn starch
2/3 Cup cold water
1 Tablespoon butter
½ Cup nuts

Combine brown sugar & corn starch. Add water & cook until thickened. Stir in butter & nuts.


Cinnamon Rolls

Ingredients:
1 Pkg yeast
½ Cup warm water
4 cups flour
1 cup milk
¼ Cup sugar
4 Tablespoons shortening
1 teaspoon salt

mix well and cool to lukewarm Stir 1 ½ cup flour until liquid. Add 1 egg beat well. Stir in yeast add rem. flour. Rest 10 minutes. Knead 5 minutes. Let rise until double. Punch down. Rise. Roll out. 25 minutes. 375.


Apple Louise Cake

Ingredients:
½ Cup shortening
1 Cup sugar
1 egg
2 Cups flour
½ teaspoon salt
1 teaspoon Baking Powder
1 teaspoon soda
¼ tablespoon cloves
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
1 ¼ to 1 ½ cups apple sauce
½ cup nuts
½ cup raisins

Bake at 350 degrees. 45 minutes for a loaf, 30 minutes for a layer.


Oatmeal Cookies:

Ingredients:
1 Cup butter
2 Cups brown sugar
2 eggs
2 Cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 Cup oats

Cream butter. Add sugar. Add eggs one at a time. Sift dry ingredients add to first mixture. Add oats.


Spice Cake

Ingredients:
1/2 Cup shortening
1 Cup sugar
1 egg beaten
2 Tablespoons molasses
1 Cup sour milk
1 teaspoon soda
Spices and nuts
1 1/2 cup flour

Meat Loaf Evelyn

Ingredients:
2/3 Cup corn flakes
1 Cup milk
1 1/2 pound beef
1 slightly beaten egg
1/4 Cup grated onion
1 teaspoon salt - pepper
1/2 teaspoon sage
4 Tablespoon A-1 Sauce

Mix meat, eggs, onion and seasonings. Cover meat with sauce. Bake 45 minutes.
