OLD-FASHIONED POUND CAKE


3 cups sugar

1/2 cup shortening

1 cup (2 sticks) butter, softened

5 eggs, room temperature

1 teaspoon vanilla or lemon juice

1 pinch salt

1 cup milk

3 cups all-purpose flour


Preheat oven to 350 degrees.

In a large mixing bowl, cream sugar, shortening and butter. Add eggs to mixture one at a time, beating each one into mixture well before adding the next. Add vanilla and salt, then alternately add small amounts of milk and flour while beating until all ingredients are mixed.

Pour mixture into a greased and floured Bundt pan and bake at 350 degrees for 30 minutes, then reduce heat to 325 degrees and continue to bake for approximately another 30 minutes. Cake will be done when top crackles.

Remove from oven and let cool for 10 minutes before removing from baking pan.

It is very important to let the butter and eggs come to room temperature before making this cake.
