HAM AND ASPARAGUS CRUSTLESS QUICHE


2 tablespoons butter

1 medium shallot, diced

1/2 pound asparagus, 3/4" dice

6 eggs

1/3 cup heavy cream

1 teaspoon dried mustard

1/4 teaspoon salt

1/4 teaspoon black pepper

2 cups cooked ham, small dice

2 ounces bleu cheese, crumbled

4 ounces swiss cheese, shredded


Preheat oven to 350 degrees.

Melt butter in a large frying pan and sautee the shallot and asparagus pieces over medium heat for about 3 minutes.

In a large bowl, whisk eggs, cream, and seasonings until blended.

Place asparagus and the ham cubes in a well-buttered baking dish. Pour egg mixture over all. Bake 30 minutes.

Remove from oven, sprinkle the cheeses over the top of the mixture and return to the oven until done, approximately 15 more minutes.

For an extra flavor, try adding 1/4 pound of small cooked shrimp to the dish.
