herbed tomato bread
3 cups unbleached
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup grated parmesan cheese (optional)
1/3 cup applesauce
1/4 cup oil
2 tablespoons honey
3 tablespoons minced fresh parsley
2 teaspoons dried basil
1 14-oz. can plum tomatoes, with liquid
poppy seeds for topping
preheat oven to 350 degrees. combine the flour,
powder, soda, and salt in a mixing bowl. in a separate bowl, combine applesauce,
oil, honey, parsley, basil, and crushed tomatoes. pour wet mixture into dry mixture and
stir until blended. pour batter into a greased 5x9-inch loaf pan, and sprinkle poppy seeds
over top. bake for 40 to 50 minutes, until a toothpick inserted in center comes out clean.
3 very ripe bananas
2 cups flour
1 cup sugar
1 cup chopped walnuts
1/4 cup oil (or applesauce..personally i like this better!)
1 tsp. baking soda
1 tsp. salt
Mash bananas and mix well with oil and sugar. Mix flour, salt and soda together and add
to banana mixture. (if you add a little bit at a time, it seems to mix better). mix until the
flour is all blended in.
pour into a muffin pan and bake at 360 degrees until toothpick comes out clean. you can
also make bread using this recipe.
french toast for the vegan in you
i love french toast, but: #1-->i'm allergic to eggs, so if i happen to eat too many of them,
my throat closes up and i can't play my 'bone. and #2-->those poor sweet chickens.
so here's somethin that gets around those little problems, and is soooovery tasty as well.
get some soymilk..the vanilla-flavored stuff is best cause it's so nice and sweet. pour it in
a mixing bowl and add about 1/4 cup (give or take some, depending on how much soymilk
you use) of maple syrup, and then mix in cinnamon and nutmeg to your liking. make sure
these ingredients are mixed up very well. take thick-sliced bread..whole-wheat or grain
breads work best cause they're more substantial..and dip each slice in the mixture. coat
both sides of the bread and put the slices in a pan that has been sprayed with cooking spray.
brown both sides of each slice, and enjoy!
