Beer Bread

- A dark bread with a special flavour

Ingredients

(2 loaves)
25 g Yeast
6 dl Dark Beer (Any kind will do, alcohol content is meaningless)
1.5 teaspoons Salt
1 dl Dark syrup
13 dl Rye flour

Procedure

Crumble the yeast in a cup with a little sugar and leave to stand for 5 minutes, stirring occasionally - it should become runny. Meanwhile, warm the beer until it feels luke warm (37 o C). Stir in the yeast mixture, salt and syrup then as much of the flour as is needed to form a non-sticky dough. Knead for about 5 minutes adding more flour if necessary. Leave to rise under a cloth for 1 hour. Knead the mixture again and divide into 2 loaf tins. Leave to rise for 45 minutes under a cloth and turn on the oven to 200 o C. Bake for about 45 minutes in the lower half of the oven.
