I am a Cajun myself and I love my dark roast coffee, Gumbo and rice and
gravy, as well as all other Cajuns.
As I make this page, I think back of the good ol' days when I was younger and going to
the crawfish places where the crawfish were so plentiful in the rice fields of La. Back
around Creole , we would just run a dip net down and come up with a bag full of them. We
would crawfish for hours on end untill we would have two or three #3 wash tubs full of
crawfish. We would have a big crawfish boil and invite neighbors and even people we didn't
know to come eat with us.
Making these pages makes me think of my heritage and my ancestors backgrounds that i am
proud of and wouldn't change any of the traditions for anything.
All of my good friends of the net, have been eagerly waiting for this section as
others have been also.
It is really hard to tell someone how to prepare a certain
food Cajun Style. It is actually a hit or miss situation. There are so many ways to
prepare one certain recipe, which will be explained farther down.
Some prefer to prepare one certain way like Mom used to do, while others learned thier
own secret way and will not tell others. But, I am here to
tell you some of my secrets because I am proud to share my recipes with someone that I
will most probably never see or be able to invite into my home to enjoy My way of cooking.
So, Welcome to my home and "Let's pass a good time" at my dinner table.
One of the cultures of the Cajuns is mainly centered around cooking and eating. They have their own way of cooking because of the situation they were led into by the English exiling them from Acadia, Nova Scotia, Canada.
The Acadiens were exiled without anything but the clothes they had on and with no
food to carry along with them. They learned how to live off the fat of the land and to eat
what-ver they could manage to get. All the way from chickens they raised, to fish and
crabs and even crawfish that were plentiful in Louisiana. They even found the big ol' bull
frogs that were found to be very tasteful and a lot like chicken. And , believe it or not
, They found that Alligators served as a delicacy.
First, we need an essential to Cajun cookin'. It is called RICE. Without
rice, it just aint Cajun. As far as me, I wouldn't want to trade my rice and gravy for all
the taters in Idaho.
