Weedy
Lawn Salad
1C. tender
dandelion greens
1/4 C. each of common plantain, violet, chicory, purslane,
and oxalis
leaves
1/2 C. favorite cheese (Swiss is good), cut into thin strips
1/2 C. turkey ham, cut into strips
2 hard boiled eggs, sliced
1 T. chopped wild garlic tops
3 T. vegetable oil
1 T. cider vinegar
1/2 tsp. salt
1/4 C. violet, forsythia, day lily, or rose petals
Wash greens
and pat dry. Place in salad bowl and mix. Add cheese,
turkey ham, hard boiled
eggs, and garlic tops. Add oil and toss. Add
vinegar and salt and toss.
Garnish with violet, forsythia, day lily, or
rose petals.
