2 cups cooked sweet potato
4 eggs separated
1 cup sugar
1 Tbsp cornstarch
1/2 Tsp ground cinnamon
1/3 cup cream
1/4 cup butter, melted
1 (9") pie crust
Combine sweet potato, egg yolks, slightly beaten, and a mixture
of sugar, cornstarch, and cinnamon and beat for 5 minutes.
Mix in cream and butter.
Beat the egg whites until rounded peaks are formed.
Fold into sweet potato mixture and pour into a 9" pie pan.
Bake at 375 degrees F. for about 45 minutes or until a knife comes out clean.
