Potato Candy

INGREDIENTS:

1 small potato
1 pound of confectioner's sugar (you may need a little more)
1 tsp. vanilla
peanut butter

DIRECTIONS:

Boil the potato. Drain well and mash thoroughly. Mix in vanilla. Add small amounts of
confectioner's sugar until the mixture forms a rollable dough. Roll out on wax paper covered in
confectioner's sugar. Spread peanut butter over the top of the dough, and roll up. Let
harden in the refrigerator, and then cut into 1/4-inch slices.
