Corn Chowder


1 cup diced potatoes
1 cup boiling water
4 slices salt pork (or bacon), cut in small pieces
1 medium size onion, chopped
2 tablespoons flour (more or less)
1 1/2 cups cooked corn
1 cup milk
Salt and Pepper to taste
2 tablespoons chopped parsley


Cook potatoes until done. Fry the bacon until crisp. Do not drain. Add the onion and cook until onion is soft. Add two tablespoons flour and mix together. Add this mixture and the corn to the potatoes. Cook slowly until chowder starts to thicken. Add milk, salt and pepper. Heat until it starts to boil. Sprinkle with parsley.
